生煎豆腐香菇素包

 

 

突然非常狂热的想吃生煎包。。。。。。

于是乎,就自己动手做了。。。而且吃得很香哈!  一向放在厨房里的小傻瓜相机没电了,所以成品图和过程图其实不是一拨的,一个封口朝上一个封口朝下,据说封口朝下的才是正宗生煎的做法,我个人更偏爱封口朝上,萝卜青菜,各有所爱么! O(_)o… 

 

 

 

面皮原料:

 

4杯高筋面粉
11/2杯温牛奶
1.5茶勺酵母
1/2茶勺盐
3茶勺白糖
2棵小香葱,切成葱花
2茶勺白芝麻

 

 

馅儿原料:

 

1块豆腐
1根胡萝卜
1小碗干香菇
2茶勺香油
1茶勺酱油
1/2茶勺蚝油
盐和油适量
1/31/2杯水(视包子个头大小而定)

 

 

做法:

 

温牛奶加糖,化开酵母,静置58分钟后,酵母活跃起来。加入面粉和盐,启动
面包机的面团程序。

 

等面包机发面的同时,准备馅料。豆腐切成小丁,放到加了油的锅底煎至表面略微金黄,盛出。胡萝卜削皮,入粉碎机(food processor)打成小碎粒,香菇泡开,挤干水,一样打碎。 跟豆腐丁混合均匀,加盐和香油调味。

 

等面包机将面团揉好并且自动发酵完毕后,将面团取出,将大气泡揉掉,分成小剂子,分别包入馅儿,捏成小包子。

 

二次发酵约2030分钟左右。然后锅里放油,下包子,底朝上放到锅里,中火煎到底部稍硬,加水,盖上盖子,水烧干了后煎到包子底部金黄就好了,撒葱花和芝麻,略煎,出锅。


 

 

 

还是很好吃滴!

留言: Hi Yan! How's your summer so far? I made 生煎包 today too! I used your recipe for the dough and made 24 of them. My 3-year-old daughter ate 3 of them! It will crack you up if you saw her belly after she ate- it was huge!! My garden is like a jungle now. There are about 10 small fuzzy melons... wondering how I am going to cook and eat them all when they are big. Cherry tree has given us lots of cherries- very very sour... I guess it must be a sour cherry tree. Hope you are having a good summer. :) Ginny

           Yeah! I wish I were your neighbor too... hehehe~~ You sure would get a lot of visits from me! LOL!. Just saw your red bean icicle recipe... really want to try it. Red bean icicle is my favorite icicle, but can't find any in American grocery stores... I don't dare shop in the Chinese grocery store here after I found a lot of items that had been expired for 4 years!!!    (by   ginnycook)
